Crispy Crunchy Elephant Yam French Fries

French fries , finger chips (Indian English), or French-fried potatoes are Julienne-cut deep-fried potatoes .French fries are served hot, either soft or crispy, and are generally eaten as part of lunch or dinner or by themselves as a snack, and they commonly appear on the menus of diners, fast food restaurants etc.French Fries can be done with sweet potatoes also.Here we are checking a healthy version of french fries with Elephant Foot Yam(chena in malayalam).

Cut the yam into medium thick rectangular chunks, add to a bowl of salted water.Place your pan or pot of oil deep enough to fry the yams on heat, before it gets warm,add the yam chunks, and a little of the salty water the yam was sitting in previously.These yam fries are undeniably soft inside and crunchy outside. If you boiled it first before frying, it will be never as good as that.

You can follow the normal french fries method to cook the  yam but since i love a spicy version ; i have marinated my yams with very little spices to give them an extra punch..

so here we go on a simple,tasty, healthy yam french fries…

 

Ingredients

You will need

  1. Yam(1/2  of a  medium sized one)
  2. Salt-As required
  3. Water(just to immerse)
  4. Chilly powder-1/2 tsp
  5. Turmeric powder-1/4 tsp
  6. Curry leaves

Cut the yam into circles, and then cut into wide rectangles, after which you cut it into thin rectangles in the shape of potato chips.

 

 

Have a bowl of salt water ready, and drop the yam chips into the bowl as soon as you cut them. Place that bowl in the fridge for a few hours, preferably overnight, which I did(this is to give the crispy crunchy nature of french fries)

The next day, heat up oil deep enough to fry the yams, sieve the yam chips out of the salty water and marinate with the powders for around 5-10 minutes and then fry.

 

 

Don’t worry, the oil will foam and bubble up a bit, keep checking the chips every few minutes, and once it is golden, sieve it out of the oil.

 

 

Fry the curry leaves too  and garnish on top of the yam fries…curry leaves provide a nice aroma..You can omit them if not interested.

Yam fries is a must accompaniment for almost all Kerala sadyas ..but this one is completely different from the usual one..so do try out..(The Above(the normal yam fries) and below picture(the french fries version) shows the difference. )
No one is going to believe they are yams unless you tell them.Serve it to your kids,dear ones with ketchup or any spicy chutney..This can be a perfect starter for parties..
