What is Tandoori cooking? Contrary to common belief, many people think that the word “tandoori” refers to a recipe, yet it can be better described as method of cooking. While a tandoor can be used to prepare breads it is also commonly used for preparing marinated meats or vegetables over an intense charcoal fire.

A tandoor is a clay oven, it fact it is basically almost like a very large clay pit, large enough to hold a small fire created by slow burning wood charcoal.

The marinade used in almost any tandoori dish starts with yogurt. In addition to the colors provided by the spices, tandoori marinades are also flavored traditionally with ginger, garlic, coriander powder, cayenne pepper, and garam masala.

Tandoori cooking can be a very healthy and easy way of preparing foods. The trick to using a tandoor or charcoal heat is that making sure the heat hits the meat immediately.

Since i don’t have the tandoor ; am using the normal pan or tawa for cooking but am using the Tandoori Masala along with some other spices. You can either make your own Homemade Tandoori Masala or get a ready made masala as well.

Ingredients Needed:

  1. Chicken – 1 kg
  2. Tandoori Masala – 3 tsp
  3. Red Chilli powder –  2tsp
  4. Turmeric powder-1/4 tsp
  5. Coriander powder – 1 tsp
  6. Roasted Fennel powder – 1/4 tsp
  7. Ginger Garlic -green chilly paste – 1 tsp
  8. Garam Masala – 1/4  tsp
  9. Curd– 3/4 cup
  10. Lemon Juice – 1 tsp
  11. Salt – 1 tsp
  12. Food color -a tiny pinch(optional)
  13. Oil – 2 tsp(for marination- i used coconut oil )
  14. Oil for frying

Wash and cut the chicken into bite size pieces. Take in a bowl, add in all the other ingredients, except the oil and mix well. Refrigerate for at least 4 -5 hrs.

Then along with the marinade, add 2 tsp of oil, keep again for  2 -3 mins. Chicken doesn’t require  much time to cook so we are directly cooking them on tawa or pan.

Heat a non stick pan, add oil and deep fry or shallow fry  the chicken in batches.

Serve hot with Rice ,paratha,Chappathi  etc..
